GRAPEFRUIT TARRAGON LEMONADE FOR LÌCHŪN (Early Spring FEB 3-18)
Ingredients:
1 leek, sliced
(supports digestion, moves Qi)
1/4 tsp cumin, coriander and turmeric
(optional)
4 cups fresh spinach, chopped
(Liver blood nourishment)
1 block fava bean tofu or pumfu, optional 1 cup water (or vegetable broth)
1⁄2 tsp salt (or to taste)
Instructions:
1. Juice the grape fruit and lemon into a pitcher or mixing bowl.
2. Add the freshly chopped tarragon (or dried if using) to the citrus juice.
3. Add the honey to the mixture, shake or stir.
4. Pour the lemonade into glasses. Garnish with a sprig of fresh tarragon if desired. Rosemary or thyme can be used as a substitute!
